Papa a la Huancaina

1 queso fresco
2 hard boil eggs yolks
2 tablespoons hot yellow pepper sauce
ΒΌ cup oil
1 can evaporated milk
few drops of lemon juice
4 tablespoon of cottage cheese salt to taste
Blend in two batches
Blend 1/2 of each ingredients and taste to see if more hot pepper is needed, the sauce has to be creamy
if is to thick add milk if is to liquid add cottage cheese and queso fresco.

1 cup of lime juice
2/3 cups of sugar syrup
2 cups Pisco
1 cup of crush ice
1 egg white
Angostura Aromatic bitters
Prepare your own sugar syrup
In a small pot warm two cups of sugar and 1 cup of water until sugar dissolves bring to a full boil and
let it cool without stirring.
Blend all the ingredients except for the Angostura and serve in a small glass. Add two or three drops of
Angostura and garnish with ground cinnamon.
